Vegan Maple Gelato

Vegan Maple Gelato is perfect for ushering in Autumn! Whether you live in a hot climate year-round or simply want a cold ‘n’ creamy way to cool off after a sweaty workout, this Italian-inspired treat is for you. 

Aside from being low-sugar AND much lower in fat than traditional recipes, my maple gelato has a mere 150 calories for the entire pint; 16 ounces or 2 heaping cups. I do not kid when I contest that this frozen dessert tastes just like Coldstone Creamery. The smell hit me like the blast of sweet, frigid air when you open the door of that beloved ice cream parlor.

I attended VegFest this past week and was introduced to AcreMade, a plant-based egg company that is much more innovative and versatile than JustEgg. The latter has the haze of an ethical grey area surrounding it.


Vegan Maple Gelato- No Sugar?!

  • 2 cups unsweetened vanilla almond milk (480mL)
  • 3 tablespoons JustEgg or AcreMade liquid egg substitute (44mL)
  • 1/4 cup allulose (42g)
  • 2 tablespoons Monkfruit sweetener (24g)
  • 1/2 teaspoon English Toffee liquid stevia
  • 1 teaspoon xanthan gum or guar gum
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon maple extract
  1. Pour the milk into a saucepan (aka a mini pot) and turn the heat to medium.
  2. Add the vegan egg substitute, ALL sweeteners, and extracts to the milk. Whisk and whisk away.
  3. After the mixture is heated, add xanthan gum. Continue whisking (but not so that it spills,) and smash out the inevitable clumps of xanthan gum. When in doubt: WHISK, BEAT, REPEAT.
  4. Cook for about 4 minutes, then remove from heat and let cool completely. Or, if you’re impatient or on a time crunch, pour into a 1-pint Mason jar and chill in the fridge.
  5. 5 hours later, re-visit the custard mixture. Fire (ha!) up your ICE CREAM MAKER and churn as you usually do.

*This can be frozen for up to 2 hours. Please don’t freeze it overnight or leave it in the container for weeks while you forget about it or turn to Ben and Jerry’s. The taste and texture are worlds better when it’s fresh.
