Single-Serve Peanut Butter Cookie

Single-serve peanut butter cookie. 3 ingredients, 3 minutes, 3 inches, 3 o’clock-ready.

I like to reuse parchment paper until it can withstand no more burnt crumbs or spices. That’s why both photos of this snack look so rustic. Hey, that’s me “being kind to myself and the Earth.”

You need something soft and comforting in your life. And you can’t (or should NOT) eat a kitten or a cozy blanket, so make this no-bake, single-serve peanut butter cookie instead. If you’re anti-peanut or have an allergy, use almond butter powder and almond butter. The same goes for any nut or seed! Your perfectly portioned “dessert” will have around 70 calories and 4 grams of protein, give or take.

Single-Serve Peanut Butter Cookie Snack Recipe

  • 1/2 tablespoon (4 grams) powdered peanut butter, such as PBFit or PB2
  • 1/2 tablespoon (8 grams) natural peanut butter
  • 1 tsp milk of choice or creamer, such as Nutpods

Mix the ingredients IN THE ORDER LISTED. Smash out the clumps and smush it into a ball. Drop it onto a small plate, flatten the mixture into a 3-inch disc, and smooth the top. Marvel at its sheen. Freeze for a few minutes to firm up, then sink your teeth into that PB baby.

Note: I am working to squelch my sweet tooth, so I didn’t use my usual sprinkle or squirt of stevia. If you want a sugary bite, swap the creamer for a liquid sweetener (such as maple syrup, molasses, agave, you get it.) Either way, it’s more of a healthy snack than a “naughty-tasting” dessert. So, chow down! Cookies for days!
