Vegan Kimchi Lettuce Wraps
Servings are adjustable
INGREDIENTS
- 10-12 large romaine lettuce leaves (deep/long enough to stuff)
- 3 oz. vegan kimchi
- 1/2 cup cold edamame*
- 3 oz. (100g or 1/2 cup) mung bean sprouts
- 3 tablespoons chopped cashews**
INSTRUCTIONS
- Lay your lettuce leaves face up on a plate. Fill with kimchi first, then other ingredients in no particular order.
- Drizzle with peanut sauce, sriracha, garlic ginger dressing, or plain ol’ tamari if you are a simple creature.
*Can be thawed from a frozen state OR freshly shelled.
**Nut-free? Sesame seeds work in a pinch.

I hear “Oriental” is politically incorrect. Alrighty then. “Asian” is a simple swap seeing it is easier to pronounce. Any-hoo… my family used to make a mean Oriental Asian Slaw with cabbage, sesame oil, sesame seeds, and those crunchy rice noodle things. Should I re-create it for the blog? I think I will.

It comes across as “stuck in old ways,” and a little annoyed. Just thought you might wanna kno. Other than that, your site is great! Will def refer to friends.
