The BLAST Bowl

What is The BLAST Bowl, you ask? Well, give me aaaaaaa…..

B! For Breadcrumbs

L! For Lettuce

A! For Avocado

S! For Sundried tomatoes

T! For Tempeh

This vegan BLAST Bowl is a crisp summer take on the classic BLT.

 

The BLAST Bowl Recipe

Yield: A large lunch (1-2 servings)

  • 2 cups chopped lettuce, like Butterleaf or Romaine
  • 1/2 (90g) avocado, sliced and cubed
  • 1 slice of bread, torn and toasted into makeshift croutons
  • 2-3 servings (14g) bagged sundried tomatoes, julienned
  • 2 oz. tempeh “bacon”- storebought or self-spiced
  • 1/4 cup (1 oz.) fermented onions or plain ol’ pickles, optional
Optional “Mac” Dressing:
  • 1/4 pack (123g) pack silken tofu
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons nutritional yeast
  • 1 garlic clove
  • Turmeric, black pepper, iodized salt, and paprika
  1. If not using premade breadcrumbs, toss your toast strips with garlic powder and bake at 350F for 7-10 minutes.
  2. Prep your lettuce and slide it into a giant (6-cup capacity) bowl.
  3. For easy tempeh bacon: Slice that sucker into 4-inch wide strips. Measuring intuitively, whisk together soy sauce, vegetable stock/broth, liquid smoke, onion granules (not minced,) and smoked paprika. Marinate the tempeh IF you have time (it’ll last up to a week in the fridge, but you don’t need to abandon your “bacon” babies for that long.) Fry in a grill pan or on a skillet until firm and browned. Crumble/cut into bite-sized pieces.
  4. Blend optional “mac” dressing ingredients and set aside while you assemble the bowl.
  5. Plop diced avocado into one corner of the lettuce field, followed by tempeh bits, breadcrumbs, pickled onions, and sundried tomatoes.
  6. Drench the BLAST bowl with your thick sauce and stir with a rather large utensil.
