The Bob Marley Bowl (Carib-Beans!)

The Bob Marley Bowl is my go-to satisfying meal! It’s ridiculously simple to make but the flavors are unbelievably complex. Not to mention the nutrition? I’ve been known to nosh it down for breakfast. Ah, Jamaican me hungry just thinking about it!

Motto of the Bob Marley Bowl: One Bite = One Love.

Cool. Crunchy. Sweet. Salty. Spicy. Speedy. Savory. Slightly Sour. No bitterness. Good for the animals. Good for you.

I savor every single flavor of this summer salad. There’s a reason it’s been a weekly staple that I NEVER get sick of. The tantalizing temperatures and textures are unmatched! P.S. My inner editor is cringing at the wording of this post. I guess I’m too twitterpated (read: stupidly obsessed and in love) with this bowl.

The Bob Marley Bowl

Single Serving for 1 summer appetite

  • 2 cups kale
  • 1/4 cup jalapeno slices
  • 1/4 cup cucumber coins
  • 1/2 cup shredded carrots
  • 1 cup black beans, not fully drained
  • 1/2 cup chopped mango
  • 1/2 cup pineapple chunks
  • 1/4 cup minced cilantro
  • 1/4 cup smooth salsa (I used tomatillo salsa)
  • 2 tbsp nutritional yeast
  • Optional garnish: Pepitas and scallions
    Jar Assembly:
    1. Scoop the salsa and black beans into the bottom. This keeps the greens from gettin’ soggy.
    2. Stack up the veggies, fruits, and cilantro, then stuff as much kale into the jar as you can!
    3. When ready to eat, pour the jar’s contents into a large bowl and dowse with nooch.

INFO DE NUTRITION: 380 calories | 20g protein | 18g fiber | 4g fat

    Bowl Assembly:
    1. Toss everything. Top with nooch to let it “sink in.”
    a. Feel free to make this a Pastafarian bowl by adding cooked and cooled noodles;)
