Vegan Soda Gummies

Vegan Soda Gummy Guitars! (or bears, penguins, flowers, etc.) 

A Sugar-Free Soda Gummies Recipe… Admittedly, any gelatinous substance, gelatin-containing or not, turns me off. But, lovers of stretchy, wobbly, rubbery textures exist. And with those folks in mind, these gummies were born. Not just any gummies, though… soda gummies, and vegan ones at that. You can use cola, root beer, lemon-lime, fizzy cherry, cream soda, ginger ale, you get the idea.

Most sodas contain sugar with bone char, so check for a V certification if that is concerning. Also, I’ve heard agar offers trace amounts of iodine, which is great for plant-based or picky eaters. I’m a disgrace to most health nuts in that I won’t touch any underwater vegetable. Stick me in the ocean and I’m a fish, but set a pack of seaweed or Nori on my plate and I recoil like an eel. Don’t underestimate agar, though! It’s pure animal-free magic. 

You require…

1 can Zevia or other natural sugar-free soft drink, chilled

2 teaspoons agar-agar POWDER! (can try with flakes)

1 large pitted date or 1 tablespoon of whatever sweetener*

 

The steps…

  1. Heat soda and sweetener over medium-high heat til it boils.
  2. Whisk in agar, reduce heat to very low, and keep on whiskin’ for five minutes.
  3. Remove from heat, cool for a minute or so, and pour into molds. I used silicone for simple removal, but you can pour it into just about anything.
  4. Cool for at least 20 minutes, jiggle to test, and dig in! Er, pop out!

*Ya just need a lil extra zing to activate yer sweet tooth! If using root beer, I recommend some root beer extract (yeah, it exists) or crushed anise seed. 

I used a zero-sugar cola knock-off for this particular batch.

Above is a guitar trio ice cube mold. As a ’60s rocker (interpret that as you will,) they are my preferred method of digestive system delivery. With diet soda and no dates, the entire recipe is 20 calories. Add that date and you’re at 60 calories.
