Cranberry Slushee (Low Sugar, High Fiber!)

A Cranberry Slushee is the best way to welcome the new year! Sparkling champagne and cranberries are key flavors of NY Eve, and the latter ingredient is nothing but beneficial. So ditch the alcohol and get brain freeze instead!

This is not a milkshake, smoothie, or a granita. It’s an old-fashioned, newly-flavored, nostalgic SLUSHIE like you used to get at the movie theatre. But thanks to the high antioxidant and fiber content, you could slurp (or spoon, or however you eat a slushie,) this beverage/frozen dessert for breakfast, a snack, or a powerhouse healthy dessert. Oh, and, drumroll on your keyboard, please…. NO BANANA! I love bananas and that love will never die, but I have non-nanner-noshers in my life, and I love them, too.

I also skipped the protein powder this time, but you can add that in Step 2.

Cranberry Slushee

Recipe Yield: 4.5 cups

WHAT YOU’RE GONNA NEED:
  • 1 large (140g) frozen apple
  • 1.5 cups (150g) frozen cranberries
  • 1/4 cup (60g) pomegranate arils
  • 1/4 cup (50g) frozen raspberries
  • 1 cup (240mL) plant-based milk (I used Ripple, a pea protein one.)
  • 1 tbsp sugar substitute or pomegranate molasses
  • 1 cup ice cubes
  • 1/4 tsp xanthan gum
WHAT YOU’RE GONNA DO:
  1. Blend all of the fruit and milk until “smooth.” Smooth meaning mostly combined with a few unblemished chunks on the side of the blender.
  2. Add the xanthan gum, immediately followed by ice. Blend, stop, and stir the evasive bits into the blades.
  3. Pour into 2 cups and drink in the fusion nostalgia!
