Carrot Cake Ninja Creami (Vegan, Low Fat, No Sugar!)

A classic carrot cake Ninja Creami frozen dessert… just in time for Easter! 

Happy Spring, everyone. Are you looking forward to the upcoming flavors?! I can’t wait for the seasons to shift and my palate to move along with it.

I bit the bullet and unclenched my wallet just long enough to shake out the bills for a Ninja Creami. It was a test to invest, but regret has never crossed my mind since the purchase. I won’t be posting too many Creami recipes, because it is still a niche appliance, and I use other peoples’ recipes most of the time. @broccoli_mum on Instagram was my first venture into Ninja Heaven with her salted caramel sweet corn ice cream.

Now… this recipe carries ALL of the classic carrot cake flavors: carrots, pineapple, spices, “cream cheese” frosting, walnuts, raisins, and coconuts. Technically, I think that this crosses into Hummingbird Cake ice cream territory, but hey! No complaints here. Omit any unnecessary ingredients:)

Carrot Cake Ninja Creami

Yield: 1 pint

WHAT YOU’RE GONNA NEED:

  • 1 cup carrots (120g)
  • 3/4 cup pineapple* (110g)
  • 4 oz. plant-based yogurt** OR pea milk (120g)
  • 4 oz. applesauce (126g)
  • 1 packed teaspoon pumpkin pie spice
  • Additional sweetener, equivalent to 3 tbsp***
  • Optional mix-ins: 1 tablespoon walnuts, raisin pocket cereal, 2 tablespoons reduced-fat shredded coconut

WHAT YOU’RE GONNA DO:

  1. In a food processor, blend the carrots until finely shredded.
  2. Add the pineapple and blitz. Then, add the remaining ingredients.
  3. Pour into the prepared Ninja Creami pint and freeze for 24 hours.
  4. Use the Sorbet setting if you want it more like a granita. Alternatively, use Light Ice Cream. Respin for either method!

*Fresh or frozen pineapple works, but thaw the latter in the microwave for 20 seconds.

**I found a groovy oatmilk Skyr, but any nondairy yogurt should work. In fact, coconut (which is the most available DF dairy sub,) would sing well with the other flavors!

***I used 2 tablespoons of monk fruit, but anything (I REPEAT- ANYTHING) will work. Maple syrup? Check. Sugar-free maple syrup? Check and check.
