Tostada Pizzas (Tostizzas? Pizzadas?) may sound bizarre and blasphemous, but the concept works! It’s a fast, easy-to-eat, fusion recipe that suits most dietary needs/desires.Â
Born of a barren fridge and a bottomless belly, the tostada pizza lives to deliver Italian toppings on a corny platter of customizable crispness. Truly a golden child.
Tostada Pizzas
Servings vary- how many can you stack up in your stomach?
- Small corn tortillas (try to find stone-ground with minimal preservatives)
- Marinara or pizza sauce, fewer chunks are best
- Drippy, dairy-free cheese*
- Herbs: oregano, basil, fennel seeds
- Favorites: olives, jalapenos, Seitan
- Preheat oven to 350F. Get out a large baking sheet because this dish is voluminous.
- Slap tortillas onto pan, spread on sauce, lob on the cheeze, and sprinkle the remaining stuff over all that.
- Bake for 15 minutes, or until the cheeze sauce has formed a slightly golden skin.
- Want it real crispy? Toast the tortillas for a few minutes first, essentially making flat taco shells. Then continue with toppings.
*High-Protein Vegan Cheese Substitute Recipe:
- 8 oz (1 cup) silken tofu
- 2 tbsp vinegar of choice
- 2 tsp miso paste
- 1/4 cup nutritional yeast
- 1 tsp garlic powder or 2 cloves
- Salt, salt, salt, salt, salt
- 1/4 cup veggie stock, non-dairy milk, or cold pasta water
- 2 tbsp tapioca starch (must be tapioca, no corn or arrowroot nonsense today!)
- 1/2 tsp agar-agar powder, to set in fridge but can omit
- Optional for a smoked cheddar variation 1/2 tsp liquid smoke, 1/2 tsp each turmeric + paprika
- Blitz everything together except the starch and agar-agar.
- Pour into a saucepan, heat over medium, and add those two late-to-the-party ingredients.
- Whisk! Never stop whisking!!! Except when it thickens, which will be sloppy at first. Don’t give up on the goop.
- Once a pungent pudding, use as directed in above recipe idea, or refrigerate for further cheeze needs.
