Healthy DIY Pop-Tarts

Healthy DIY Pop-Tarts are a fun activity and are even more fun to eat! They’re vegan, sugar-free, and low-fat. Are they exactly like the nostalgic packaged snack? No, but they’re easier than making a from-scratch dough or emptying your wallet on those trendy, high-protein, ultra-processed “toaster pastries.” This way, you can happily and comfortably consume warm, crunchy breakfast treats every morning. 

I’m not writing “Frosted” every time “Pop-tart” comes up. But if you want a frosting, just whisk together powdered sugar, non-dairy milk, and a splash of vanilla (whatever that means.) Can also add peanut butter or powdered peanut flour, various extracts, and sweet spices.

These are blueberry, obviously;) Forgive the lack of frosting at time of photographing.

Flavor Options for Healthy DIY Pop-Tarts

Cinnamon Brown Sugar: Mix 1/4 tbsp brown sugar substitute with 3 tbsp applesauce and 2 tsp cinnamon.

Strawberry: Use strawberries instead of blueberries, otherwise follow recipe below.

S’mores: Place a dark chocolate square (preferably 85%+ for more nutrients,) in the middle, followed by a gelatin-free marshmallow and a honey-free graham cracker.

Banana Split: Slice a few strawberries and one banana into coins. Layer a banana round, a square of chocolate, and a piece of strawberry.

Birthday Cake (trust me on this one) : Mash a small, baked Japanese sweet potato, then add 1 tsp vanilla, 1/4 tsp almond extract, and 2 tbsp of plant-based vanilla protein powder.

They’re square, not rectangular, but if that really matters to you… sorry? Here’s a consolation recipe:

Healthy DIY Pop-Tarts

Yield: half of however total wraps you have, this exact recipe makes 5

  • 10 vegan wonton wrappers (not egg roll)
  • 1/2 cup blueberries, fresh or frozen
  • 1 tbsp sugar or sugar substitute
  • 1 tbsp chia seeds
  • Cinnamon and nutmeg, to taste
  • 1 tbsp maple syrup, classic or sugar-free
  1. Preheat oven to 325F and find a cookie sheet lying around. Line it with parchment paper unless you’ve got a life-saving silicone baking mat.
  2. If blueberries are frozen, microwave for 30 seconds. Mash until you get a chunky jam.
  3. Pound in chia seeds, sugar sub, and spices.
  4. Dollop mixture onto the center of 5 wonton wrappers. Cover with a blank one, seal with a water-dipped finger.
  5. Once you have 5 square Pop-tarts, baste the tops with the maple syrup.
  6. Bake for 13-15 minutes, allow to cool and make a glaze or something I don’t know.
